Marquette – August 15, 2014 – My cousins in Georgia say, “The best barbecue joints down south use only hickory wood.”
But we don’t have much hickey wood up here. There’s birch, jack pine, and a lot of maple. Todd at Union Grill pointed out to me that up north, maple is abundant, and when split finely, it’s better than hickory. That’s why The Union Grill gets all of their maple locally in Skandia creating the perfect indirect heat for the best maple wood fire barbecue.
Todd says, “Try it once and you just can’t do it any other way!”
Ohh does it ever smell good when you catch the aroma of the smoker across the parking lot.
So I guess I better call my cousins and tell them to come up here and try some real maple smoked BBQ, then they’ll know first hand!
